St. Patty’s day is Friday and you may be thinking about a wee bit of Irish food you’ll make?
Mr. C is half Irish and raised by his very Irish grandmother but doesn’t like traditional Irish food? He will NOT eat corn beef and doesn’t like sauerkraut either, won’t eat lamb or doesn’t like Irish beer. Therefore I make non-traditional Irish food that he thinks is Irish food!
So, I make less traditional dishes that he enjoys. Since we only eat two meals a day I’ll make an Irish Eggs for breakfast.
Mr. C told me his very Irish Grandmother, born in County Cork Ireland, made her corn beef with Smoked Butt.
The Irish eggs is an easy breakfast to make….
Saute in light olive oil (why not to use other oils) sliced potatoes, onion and green pepper. Slice the potatoes thin or cook 2 mixtures in microwave to soften up a bit.
TIP: When slicing green pepper slice in wrong side up…much easier to cut though.
Once the potatoes, onions and green pepper are tender…
Then stir in 6-8 well mixed eggs…cook till done. Season to taste.
we have Mustard Crusted Pork and Cabbage. Even thought the dish is typically used at Easter it fits perfectly for St. Patty’s day too.
