Valentine’s Day is just three days away, and Mr. C and I never go out to celebrate. First, no ones cooks as good as me :-}, second you wait forever to be seated/served and the food is usually disappointing. For me, the only way to have a romantic evening is to stay home and enjoy dinner by the fire. That’s why I’ll be making these Valentine Strawberry Appetizer and Dessert.
There are many staples I keep in my freezer, some are frozen pie dough, wonton wrappers, puff pastry etc. Keeping these on hand means I can pull a dessert quickly together. Remember I’m not a baker….so anything to make this task easier is fine by me!
I love Wonton Wrappers. They are a diamond in the ruff. You can make wontons (usually in produce deparmtent by the fresh ginger), dumplings, lasagna, dessert and appetizers using them. They also freeze very well.
I used wonton wrappers for both the appetizer and dessert for this post. But if there was pie dough in my freezer, and if I felt better (still have major cold) I would of make some pie or even puff pastry dough . Also, wonton’s marriage better with a savory vs. a sweet.
I cut the wonton squares (or pie dough) in to 2″ circles, I couldn’t find my pastry cutters so I used an old jello mold to cut into circles. I pressed down on the mold (can use small coffee cup or small glass) and used my finger to pull away the excess.
Quick and easy to do. A baking spray was sprayed in to the muffins cups and lightly mold the won tons inside. Baked at 350° for about 10 minutes. My stove is a professional one so you might need to gone to 12 minutes.
Then cut the strawberries into hearts using a grapefruit knife. You can still make them if you don’t have one, remove stem on top, and cut the top in a V. Then slice the strawberries thinly.
The dessert filling is chocolate pudding, make your own, which is so easy to do. Takes about 15 minutes only. I filled each cup with chocolate pudding and then topped with strawberries. Next I sprinkled with powdered sugar or a drizzle of honey. Being a crunch lover I also added chopped walnuts.
You can make the won ton/pastry cups in the morning, the chocolate pudding the night before, and fill your cups just before using. So super easy and quick.

Valentine’s Strawberry Dessert
1/2 to 1 cup strawberries
1/2 cup sugar
2 cups milk
1/3 unsweetened cocoa power
2 tsp vanilla extract
won ton wrapper or preferably pie pastry
powdered sugar or honey
Homemade chocolate pudding: in a small pan pour in two cups milk (almond mild for DF), 3 tbsp of cornstarch, 1/3 unsweetened cocoa powder, 1/2 cups sugar (I used half baking stevia, half sugar). Turn heat to high and whisk until thickens, once thickens whisk for 2 more minutes. Then take off heat and whisk in vanilla. Cool in refrigerator until ready to use. NOTE: to prevent skin on top over with saran wrap.
About an hour before serving, filled cups with chocolate pudding, add sliced strawberries on top, If you want sprinkle powdered sugar on top. Next add honey or walnuts to your liking.
WonTon Wrapper/pie crust – cut into circles, spray mini muffin tins, mold in side tins, and bake anywhere from 8 to 12 minutes at 350 degrees.
Valentine Strawberry Appetizer
Serves 2 – 4
1/4 to 1/2 cup strawberries, thinly sliced
1 tablespoons balsamic vinegar
1/2 tablespoon sugar, or to taste
6 – 8 round wonton wrappers (hard to find) or use squares and cut to 2 – 2 1/2″ rounds
1/8 cup crumbled goat cheese
1/8 cup basil leaves, chiffonade
Preheat oven to 350 F. Also, lightly spray a mini muffin tin or coat with nonstick spray.
In a large bowl, combine strawberries, balsamic vinegar and sugar; set aside.
Then fill each baked wonton with strawberry mixture. Sprinkle with goat cheese.
Serve immediately, garnished with basil, if desired.
