
It's a dreary and windy day, the leaves our neighbors never rake :-{ are blowing around and dancing about in the air. Lake Michigan is on a flood warning from Superstorm Sandy until early evening and the waves are more like an ocean instead of a lake. It seemed like a perfect day to make Slow Cooker Fajitas.
Here's how I made them...

Sprinkle your flank steak with Fajita Seasoning Mix, I made mine from scratch (recipe below) or you could use a seasoning packet. Set your slow cooker to low for 8-9 hours (5-6 on high).

For a fresher taste, I saute my onion/green peppers on the stove top, but you could add them to your slow cooker with the beef.

I like to "warm" my tortillas over an open flame before filling.

I served with Mexican a Couscous Salad I'll share tomorrow. The Fajitas were so tender and flavorful. There was enough for hubs and I to have for lunch tomorrow. Yummy!!!!!
Slow Cooker Fajitas
3 Tbsp. Fajitas Seasoning (or 1 packet seasoning mix)
1 1/2 pound flank steak
1 large onion, sliced
1 green pepper sliced
- Season flank steak with 3 Tbsp of the fajitas seasoning on both sides. Place in slow cooker, cook on low 8-9 hours (high 5-6).
- 1 1/2 hour before fajitas are done saute the onion/green peppers in a pan on your stove stove ( or add to slow cooker with steak)
- Warm up tortillas over open flame.
Fajitas Seasoning Mix
3 Tbsp cornstarch or arrowroot powder
2 Tbsp chili powder
1 Tbsp sea salt
1 Tbsp paprika
1 Tbsp sugar
1 1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/3 tsp red pepper flakes
1/2 tsp cumin
Mix ingredients together. Store remainder in spice jar.
