You might not know it, but I love Latin food. So when I find a new recipe that I can make in my slow cooker - well I just couldn't find a reason not to. Slow Cooker Chicken a la Criolla had me at hello. It has such great flavor and is healthy too.
There isn't anything I would change about this recipe...it is so good.

It's pretty simple, you basically put all the ingredients in your slow cooker...

Set your slow cooker to low or high. Now here's the hard part, waiting to eat it, your home will smell so good it will be difficult not to open the lid and nibble!

Crock Pot Chicken a la Criolla Ingredients: 10 (2 lbs) skinless boneless chicken thighs, fat trimmed

1 small onion, diced
1 garlic clove, crushed
1 bell pepper, chopped or sliced
4 plum tomatoes
2 tbsp alcaparrado or pitted spanish olives
8 oz can tomato sauce
1/4 tsp oregano
1/4 tsp cumin
salt to taste
1-2 bay leaf
1/4 cup chopped cilantro (plus 2 tbsp more for serving)

What a great recipe! Can't wait to try this one. I know chicken thighs have more flavor than the breast, but I don't like dark meat, so I'll be subbing chicken breasts instead.
This looks really good Cathy, is there anything you can compare the taste to? I can't imagine what it would taste like, but it looks scrumptious!
