Thanksgiving is only two days away…time crunch is on!
If you need an easy cranberry salsa appetizer this one would fit the bill.
The recipe is easy to vary up! Use either goat or cream cheese and serve on crostini or with crackers. This is also a good condiment served over turkey or chicken.
A very versatile salsa!
Cranberry Salsa Appetizer
Serve on Crostini with goat cheese, or over a cream cheese block served with crackers
1 1/2 cups (12 oz) whole-berry cranberry sauce
1/4 cup finely chopped fresh cilantro
3 Tbsp chopped green onions
1 D’anjou pear or apple, cored and finely diced
1 jalapeno pepper, seeded and minced (if your looking for more heat use two jalapenos)
2 Tbsp fresh lime juice
1/4 tsp ground cumin
1 Tbsp brown sugar or 1/4 cup white sugar
1 pinch salt
Baguette loaf or crackers
Cheese option: goat cheese or cream cheese
If you have a food processor – add all the salsa ingredients and give it a whirl until combined or combine in a medium bowl. The flavors blend well if you let sit overnight.
Served with Goat Cheese and Crostini:
1 french baguette, sliced into 1/2″ rounds and lightly toasted
10 oz fresh goat cheese at room temperature
Have Goat cheese at room temperature. Slice the baguette into 1/2″ rounds (angled cuts look nice) and lightly toast in a toaster oven or under a broiler.
Spread a layer of goat cheese on each toasted round.
Top goat cheese with a dollop of salsa or spread the cranberry salsa in a thin layer.
Garnish each crostini with a few extra leaves of cilantro.
Served With Cream Cheese and Crackers:
1 block Cream cheese
crackers of your liking
Place block of softened cream cheese on a serving dish, using a chopstick poke holes into the cream cheese and pour salsa over the top of the cheese. Serve with crackers.
