Hey there! Cilantro Lime Chicken is a great recipe for the hot, hot, hot weather we’ve been having lately. Cilantro Lime Chicken is a lighter, versatile meal used making our Burrito Bowls. An all in one meal that is easy, yet flavorful. Chicken thighs are my preference but breasts can be substituted.
Juicy, moist, flavorful and easy to make for hot weather, or, any time of year. The chicken can be used for tacos, burritos, burrito bowls like I made or even in quesadillas or enchiladas, over a salad! Very versatile!
Cilantro is a favorite herb or mine. .and I know, you either like it or you don’t! I love it! Tip: the cilantro stems can be used since they are very flavorful and tender.
The chicken marinaded (cilantro, oil, cumin, paprika, salt, pepper and lime) is thrown together in a bag/pan. The chicken can be marinaded for 3o minutes, or better still, up to two days. The marinade can be quickly pulled together when making the day before’s dinner. Which makes this meal even quicker to make.
Cilantro Lime Chicken
2 pounds skinless, boneless chicken thighs or breast
2 Tbsp olive oil
¼ cup fresh lime juice (2- 3 limes)
¼ cup cilantro leaves and stems, chopped
½ teaspoon salt
½ teaspoon cumin
½ teaspoon paprika (optional)
Garnishes: Sliced avocado, lime wedges, fresh sprigs of cilantro.
In a zip lock bag of large bowl mix the olive oil, lime juice, cilantro, salt, cumin, and paprika. Add the chicken and mix well until the chicken is fully covered. Cover and place in the fridge for 25 minutes to marinate or up to 2 days in advanced.
Grill over pre-heated medium high heat until cooked and/or Pan Sear using a pre-heated heavy-duty skillet to medium/high heat. Add 1 tablespoon olive oil and the chicken thighs/breasts. Cook for 6-7 minutes on each side.
After cooking (either method) cover and allow to rest for at least 5 minutes before cutting. Remember meal continues to cook after removing from heat which is referred to “residual” heat.
Served with Cilantro Lime Rice (make white/brown rice adding 1 tsp. of olive oil was added to liquid. After the rice is cooked squeeze fresh lime juice and fresh cilantro and mix in). Thawed frozen corn (or fresh), drained black beans, tomatoes, chopped green onion/red onions or ingredient that meets your fancy. Squeeze some fresh lime juice over the top and sprinkle with cilantro.
