Not being someone who typically craves sweets every now and then I do? I also had a craving for a tiny bit of chocolate. and Chocolate Coconut Bites were just what I was looking for. Also, its no bake.
Don’t you just want to bite into it? This is a less than five ingredient recipe. Quick and easy.
Their really easy to pull together but the hardest part is letting them sit in the refrigerator while hardening.
Using unsweetened coconut pulse in a food processor until broken down.
Add coconut oil and maple syrup. Next, combine the mixture with more coconut and stir to combine.
After mixing roll into 1″ balls. Now, here’s the hard part..but them in the refrigerator to harden for about 4 hours or overnight.
Then roll the bites into melted dark chocoate and sprinkle coconut on top.
I have to admit these didn’t’ last long because they were so good.

Next time, to make it even easier, I’ll put in pan and cut into squares instead or rolling balls.
Oh, just thought about this, I love Almond Joy, so I might place an almond on top.
Chocolate Covered Bites” servings=10-15
2 cups unsweetened shredded coconut
4 tablespoons maple syrup or honey
1 tsp vanilla extract
5 tablespoon coconut oil (I love Aldi organic)
6 ounces of dark chocolate (used Trader’s Joe’s)
1. Using your food processor process until the coconut is broken down. While processing add the maple syrup, coconut oil and vanilla. Process until combined.
2. Roll into ball using your hands. After they were set I then rolled again to and they were easier to shape. Place the coconut balls in the refrigerator until firm, 1 hour? or over night.
3. Slowly melt the chocolate until smooth. I used a small pan over low heat.
4. Lay out a sheet of wax paper on a cookie sheet. Then using two forks roll each coconut ball in the chocolate until covered. Scoop the ball and place on the wax paper and sprinkle coconut over the top. Place in refrigerator until hardened.
