With the summer season coming to an end I have plenty of basil left to use. I love spaghetti but I wanting to do a twist on traditional spaghetti I made Chicken Basil Pasta.
The Chicken Basil Pasta is also a quick meal to pull together and very flavorful. What gives the dish an unique taste is using sun-dried tomatoes in the sauce.
Chicken tenderloins were used but you could also use sliced chicken breast. Since chicken tenderloin cook up quickly it pulls the meal quickly together.
Cooking is a very creative process and I always change our meals up. There’s no quicker way to make cooking tedious is making the same meals over and over again! Boring!
Saute the onions and garlic in the olive oil until tender then add the chicken tenderloin and cook until done. Add some diced and sun-dried tomatoes and toss with basil. Simple, easy and good.
After going back to gluten and dairy free the pasta I use is Bionaturae. A company in Italy who makes organic gluten free food. It taste like just like regular pasta! Very good.
Chicken Basil Pasta
2 cups rotini or spaghetti pasta (for Gluten free I use Bionaturae)
3/4 lb chicken tenderloins, cut into bite-sized chunks
1 small yellow onion, chopped
3 garlic cloves, chopped
1 cup fresh basil, torn & packed
1 (14 1/2 ounce) can diced tomatoes
2 Tbsp sun-dried dry package or oil pack (make sure to drain the oil before using)
Parmesan cheese to taste (omit for dairy free)
Heat skillet on medium with a tbsp of olive oil.
Cook pasta according to directions. (I put the water on to boil while I’m cooking the garlic/onions/chicken, so the pasta is finished about the same time as the rest.).
Toss in onion and garlic. Stir 1 minute.
Add chicken. Stir and cook 3-5 minutes, until chicken is mostly cooked through. At this point, I sprinkled with some ground pepper.
Add can of diced tomatoes and half of basil. Simmer 3-5 minutes, until basil is wilted.
Add sun-dried tomatoes and rest of basil.
Simmer another 2 minutes or so, to let the sun-dried tomatoes soften.
Spoon on top of pasta. Sprinkle with parmesan cheese & enjoy!
