A Yummy Healthy Breakfast

Hello everyone!

Yesterday sticking out of our mail box was my Good Housekeeping Magazine.  Immediately started roaming through it when I spotted the article Never Diet Again!  Haven’t we all heard that before.

Since I’ve lost 55 pounds over the last year I don’t need to be on a diet and just looked over the recipes. One caught my eye…and sounded like a yummy healthy breakfast…

Avocado and Egg Breakfast

I’m always on the lookout for a good healthy breakfast, even though I love bread I don’t like to eat muffins or bagels for breakfast.  What really caught my eye was that the recipe has only four ingredients…toast, egg, avocado and lemon juice.

Well, let me tell you, I LOVE avocado!  I really have to contain myself to only eat 1/2 avocado a day.

Avocado and Egg Breakfast Sandwich

I cooked it up in just a few minutes.  Mash 1/2 avocado, add 1/4 tsp. lemon juice and a pinch of salt.  While toasting a piece of bread fry up one over easy egg.  Spoon avocado mash over toast and put egg on top.

    I love avocado, too – and it’s so good for you! You can also take a piece of toast (I use Ezekiel bread – all sprouted grains) and layer on avocado, cucumber, tomato, and radishes. Makes a yummy light lunch or snack. Another good idea with eggs is to layer them on top of quinoa (very high in protein and vitamins) with cooked spinach.
